Lemon-Sorrel Foraged Salad
Ingredients:
1–2 cups fresh yellow wood sorrel leaves and flowers
Mixed greens (dandelion, violet leaves, spinach)
½ cucumber, sliced
Crumbled goat cheese or feta
Sunflower seeds or walnuts
Light vinaigrette or lemon-olive oil dressing
Instructions:
Toss all greens, toppings, and dressing.
Garnish with sorrel flowers for a citrusy burst and bright color.
Sorrel-Crusted Chicken or Fish
Ingredients:
Chicken breast or white fish fillet
½ cup finely chopped sorrel
½ cup breadcrumbs
Salt and pepper
1 egg, beaten
Oil for frying
Instructions:
Dip meat in egg, then coat with sorrel-breadcrumb mix.
Pan-fry until golden and cooked through.
Serve with lemon wedges or a light yogurt sauce.
Sorrel Leaf & Herb Biscuits
Ingredients:
2 cups flour
1 tbsp baking powder
½ tsp salt
½ cup butter (cold)
¾ cup milk
½ cup chopped yellow wood sorrel leaves
Optional: chopped green onion or parsley
Instructions:
Mix dry ingredients and cut in butter.
Stir in milk and sorrel until just combined.
Drop or roll out biscuits and bake at 400°F for 12–15 minutes.
Sorrel Omelet with Cheese
Ingredients:
2 eggs
¼ cup chopped yellow wood sorrel leaves
2 tbsp shredded cheese (cheddar, goat cheese, etc.)
Salt and pepper
Butter or oil for pan
Instructions:
Whisk eggs with salt, pepper, and sorrel.
Pour into hot greased skillet. Cook until mostly set.
Add cheese, fold, and finish cooking.
Garnish with flowers or extra chopped leaves.
Wood Sorrel Compound Butter
Ingredients:
½ cup unsalted butter, softened
2 tbsp finely chopped yellow wood sorrel leaves
½ tsp lemon zest
Pinch of salt
Instructions:
Mix everything together and roll into a log.

Ingredients:
1 cup yellow wood sorrel leaves
½ cup parsley or cilantro
1 garlic clove
Juice of ½ lemon

Instructions:

Ingredients:
1 cup fresh sorrel leaves
3 cups cold water
Juice of 1 lemon
2 tbsp honey or sugar
Instructions:
Blend sorrel leaves and water, then strain.
Stir in lemon juice and sweetener.
Serve chilled over ice with a sorrel flower garnish.
